Chef Rick’s Fried Oysters with Horseradish Mayonnaise
Ingredients: 2 dz. oysters 3 eggs 4 oz. beer
3 Tbs. Creole Mustard 10 oz. Fish Fry mix 1 cup corn meal 3 Tbs. Crab Boil seasoning Oil for fryer
Preparation: Set deep fryer to 350¡. Mix eggs, beer and
Creole Mustard. Add oysters and set aside in the refrigerator for 1 hour. Blend Fish Fry, corn meal and Crab Boil seasoning. Dredge oysters in mix. Fry for 2 minutes in deep fryer. Serve with horseradish mayonnaise
Horseradish Mayonnaise 4 Tbs. Horseradish 2 cups mayonnaise 2 Tbs. Creole Mustard 1 tsp. Whole Sweet Basil Mix together all ingredients. Serve immediately.
