Chef Rick, Great site. I am a student at Le Cordon Bleu Institute of Culinary arts and am interested in food writing. Your articles are superb. Cajun cooking is one of my faves. One question. What happened to your little tidbit about the first fried chicken. Had to do with the first church piknic. I loved that article. I laughed everytime I read it. If you still have it could you email it to me. Thanks.

Chef Rick,

I stumbled upon your website, and I am so glad I did. My entire family is from New Orleans, and now that so many of them are scattered all over I realize how important it is to collect these recipes for the next generation to carry on.

God Bless You and Thank You!!

Hi there I adore your website. You are redefined
as a Food Saviour in my eyes. I have used many of your wonderful recipes for many years. Pleased many appetites with them all, only asking for more. I do certainly miss the great music you used to offer on your website, What Happened? Please Continue and carry on with all the super ideas you offer to us all

Oh-me-ya! Sha-biday! I've lived in Louisiana, for spell, My Dad was stationed at N.A.S. Belle Chase. I went to Westwego Elementary, and Worley Middle School. I loved it when the cafeteria would serve red beans and rice, and I loved the dirty rice, they would serve also. But of course nothin' beats a big-o-pot of low country boil, the crawfish, shrimp, crab, corn on the cob, sausage, potatoes, and quartered onions! GAWD, what wonderful memories I have of Louisiana.
Go UofF Gators!
An honorary coon-ass

Loved finding your website...Spent a week in Charleston, and fell in love with their food...Living in Texas, it is hard to find food like this, so I am glad to have found all of your wonderful recipes, as now, I can just cook it myself!

I first want to thank you for the number of recipes you have offered me. I am a Culinary Student currently with hopes of following your footsteps and becoming famous for my dishes. Secondly, in my recent studies i find that many of the recipes vary upon region and i was wondering if you have noticed the difference as well. KEEP DOING IT BROTHA!!!
